Variety: Parellada Origin: Alella, Catalunya Notes: Collaboration with two local growers and friends, Pep and Pilar. Macerated whole-cluster for 7-10 days in plastic tubs before pressing to stainless steel tank. Raised on the lees for 4 months and bottled without added SO2.
